i’ve been making a lot of soup. it’s easy to put together, low maintenance while it cooks, and can feed many.

split pea soup
(amounts and time are approximations because i don’t follow recipes exactly.)

- 1 lb. split peas, rinsed
- 6 cups water
- vegetable bouillon
- olive oil
- 5 cloves garlic
- medium onion
- 5 stalks celery
- 3 carrots
- 1/4 cup nutritional yeast
- 1 jalapeno pepper

chop onion and mince garlic. saute in olive oil. add water, bouillion, and split peas. cook for 45 minutes. chop celery and carrots. add to soup. boil for 45 minutes or until peas get mushy. at the end, add in the nutritional yeast and sliced jalapeno pepper. done. yay!
